I am a real oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of these yet? (? They're a few of the most popular recipes on my website cause they taste really sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
So you are going to start with whole wheat germ (or gluten-free, if you prefer) and instant oats (such as these... or those for a gluten-free version!) . Immediate oats are thinner and smaller than conventional rolled oats, and you may find them at canisters right alongside those old-fashioned oats at the grocery shop.
I probably sound like a broken record by now... But because I ? you and also want your cookies to flip out absolutely soft and chewy, I am reminding you ... Measure your flour and oats correctly, with this method or even a kitchen scale! (? That is the one I have and adore. Too much of either side will make your biscuits taste cakey or sterile, instead of chewy. This is particularly true of the oats--they behave like little sponges and consume lots of moisture from the cookie dough!

Watch those bananas? And all of those brown stains? When it comes to baking bananas, brown = beautiful! I ? additional speckly bananas cause they have a lot bright, bold flavor--along with extra natural sweetness! That is the minimum amount of brown that I recommend. More is even better!
The remainder of the cookie dough's sweetness comes in another pure ingredient... Pure maple syrup (such as that!) . You would like the type that comes straight from pine trees, which is usually sold in thin glass jars or squat, round plastic jugs. Forget the pancake syrup and sugar!

The raisins add much more natural sweetness! The freshly bought, additional plump, perfectly tender ones are perfect... But if you have old, somewhat dried out carbohydrates (hmm... it seems absurd to describe dried fruit as dried out! ) , that is okay!
Simply add them to a microwave-safe bowl, and put water on top till they're completely coated. Seal plastic wrap across the surface, and then microwave the bowl on high for 1 minute. If you let the raisins sit mixing together the cookie dough, this small hint hydrates them so they're tremendously juicy--and that makes a difference in these cookies as soon as they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
The familiar comfy spices and plump blueberries make these much more irresistible. They will keep for at least one week if stored in an airtight container in the fridge --should they last that long!
1 cup (100g) instant oats (fermented if essential and measured like that )
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 tsp baking powder
1/4 teaspoon salt
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. In another bowlwhisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Let the cookie dough rest for 10 minutes.
Using a spoon and spatula, dip the cookie dough into 15 rounded scoops onto the sheet, and flatten to the desired thickness and width using Banana Oatmeal Cookies The Beachbody Blog a spatula. Bake in 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It is extremely important to measure both the oats and flour properly utilizing this method or even a kitchen scale. (? That is exactly the one I own and love!) Too much of either can dry from the cookies and render them cakey rather than chewy.
Instant oats are also referred to as quick-cooking or minute oats. They come in massive canisters, exactly like old-fashioned oats. They're not the ones at the tiny flavored loaf of bread. To make your own, include the same number of conservative yogurt into your food processor, and pulse 10-12 days or until the oats are about 1/4 to ? of the original size.
For the fermented flour, I suggest the following mix: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, 2 tablespoons (15g) brown rice flour, and 1/2 tsp xanthan gum. Most store-bought fermented flour blends (like that one!) Will also do the job, if measured like this.
For the best results, use the ripest and spottiest bananas you can find!

Should you allow the peppers sit while mixing together the cookie dough, then this small trick hydrates them so they're really soft and juicy!
